Ingredients
- 1 tablespoon ground flax seed plus 3 tablespoons water
- 1/4 cup melted coconut oil
- 3/4 cup evaporated cane juice
- 1 teaspoon vanilla
- 3/4 cup almond milk
- 1 cup whole what pastry flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup chopped nuts
- 2 cups chopped & peeled apples
Directions
- Preheat oven to 400F degrees. Line a muffin pan with paper or silicon baking cups.
Combine the first 5 ingredients and stir well. Add all the dry ingredients and mix. Fold in the apples and nuts.
Pour batter into baking dish and bake for about 40 minutes or until a toothpick comes out clean.
